Banana Popsicles

For a great mix of spooky and delicious, try out these banana popsicles, they are popular with both the adults and the kids, and they are pretty mess-free as they’re sat on a popsicle stick.

You will need:

  • Large bananas
  • Vegan greek yoghurt (or melted white chocolate, if you’re looking for a sweeter treat)
  • Powdered sugar
  • Mini chocolate chips, or raisins
  • Popsicle sticks
  • Optional: Almond or peanut butter

Line your baking tray with parchment paper or a silicone baking mat. Peel your bananas and slice them in half, then slice them again in half, lengthways. You’re looking to have four long, narrow pieces of bananas. Gently insert a popsicle stick into the bottom of each banana piece, and then place it onto the baking tray. 

If you’re feeling adventurous, you can create some popsicle mummies, simply cut the pointy tips off your bananas and slice them into three equal pieces. You’re trying to create a “log”. Insert a popsicle stick into the end of each and pop onto the baking tray.

Freeze all the bananas for at least 30 mins, or preferably overnight. 

Mix your greek yoghurt with two teaspoons of powdered sugar, and then dip the frozen bananas into the mixture and return them to the baking sheet. Add the chocolate chips or raisins for the ghosts, but do not add eyes to the mummies yet. Return to the freezer for at least 1 hour to set the yoghurt. 

Microwave your peanut butter until smooth for the mummies, usually around 30 seconds, then drizzle on top of the bananas to make bandages. Place the chocolate chip or raisin eyes, and return to the freezer until the butter is firm. 

When you’re ready to serve, let the popsicles soften at room temperature for a few minutes, then enjoy.

Veggie Pumpkin Tray

This plate, designed to look like a pumpkin to celebrate the Halloween season, is a favourite healthy snack idea. It just takes 10 minutes to create and only requires four ingredients (plus your favourite dip). It’s excellent as an appetiser, snack, or quick side dish. It’s a unique take on a standard fruit and vegetable platter that’s always a hit!

Simply pour hummus or any dip you like, in two tiny containers for the eyes and set them on a large platter for the pumpkin veggie pumpkin tray. Then, using carrots, form a circle. Make the stem out of chopped celery stalks, the nose out of olives, and the mouth out of cut cucumbers. Around the plate’s edge, you can add a variety of veggies (or additional olives).

Candy Corn Lollies

Candy corn is an iconic Halloween sweet, but they are definitely not a healthy choice as they are filled with sugars and artificial colours. For the famous look of candy corn, try these lollies that are organic, gluten-free, vegan, and deliciously nutritious.

You will need:

  • Ice lolly moulds
  • Coconut milk
  • Liquid stevia
  • Frozen pineapples
  • Frozen peaches
  • Orange juice

Sweeten the coconut milk with five drops of stevia, fill a third of the moulds with the mixture, insert your popsicle sticks and freeze completely. 

In a blender or food processor, puree pineapples with just enough water to blend until thick and smooth. Fill the second third of the moulds with the pineapple and freeze. Repeat the process with the frozen peaches and fill the rest of the moulds.

Release the lollies from the mould and enjoy.

Halloween Stuffed Peppers

If you’re looking for a themed dinner before your little ones go off trick or treating, then these healthy stuffed peppers are what you’re looking for. 

Remove the tops of the peppers and save the tops but discard the seeds and any white flesh within. Carve eerie Halloween faces into the sides with a little sharp knife. Chop any offcuts into small pieces and set them aside.

Create the delicious wholegrain filling outlined on the BBC Good Foods website, fill the peppers with this mixture and replace the lids, using cocktail sticks to secure them in place. Place the peppers face up in a deep roasting tin and bake.

Roasted Pumpkin Seeds

Pumpkin carving is a favourite Halloween activity, but the “pumpkin guts” always end up going straight into the bin. Instead, create these roasted pumpkin seeds for a savoury snack after a day full of spooky activities. 

You will need:

  • Pumpkin seeds (about 2 cups)
  • Olive oil
  • Chilli powder
  • Smoked paprika
  • Garlic powder
  • Cayenne pepper
  • Honey or maple syrup
  • Sea salt

Empty your pumpkin and set it aside for carving. Separate the seeds from the pumpkin flesh and transfer them to a colander to rinse and remove the pumpkin slime. For a crispy, crunchy seed, boil them for 2 to 3 minutes and leave them to dry completely. 

Warm oil in an oven-safe skillet over medium heat, then saute the pumpkin seeds until lightly golden. Add the honey or maple syrup and sit, then transfer the skillet to the oven to roast for 30 to 40 minutes. Cook the seeds until they are crispy throughout. 

Transfer to a baking sheet to sprinkle with salt to taste, then leave them to cool completely.
